Sweet, spicy, and loaded with protein! Chef Ali’s Protein-Packed Bison Stuffed Sweet Potato brings tender baked sweet potato, seasoned bison, creamy cottage cheese, and a kick of cowboy candy. Healthy eating never tasted this good!

Ingredients
- 2 medium sweet potatoes
- 1 lb ground bison (Freedom Bison Ranch from Whitt’s Place of course)
- 1 packet taco seasoning or follow the instructions in the back of the large container. I used 3 tablespoons. (to taste)
- 1 cup low fat cottage cheese
- 2–3 tbsp cowboy candy (candied jalapeños), chopped (pick up from Whitt’s Place!)
- Salt and pepper, to taste

Instructions
1. Bake the Sweet Potatoes
Preheat your oven to 400°F. Scrub the sweet potatoes, pierce them a few times with a fork, and bake for 35–40 minutes or until tender when pierced with a knife.
2. Cook the Bison
While the potatoes bake, heat a cast iron skillet over medium-high heat. Add the ground bison and cook, breaking it apart with a spatula, until browned (about 6–7 minutes). Bison is so lean there is no need to drain any excess fat

3. Season the Meat
Stir in taco seasoning. Mix well and cook another 1–2 minutes until the seasoning is fragrant.

4. Prepare the Potatoes
Once the sweet potatoes are done, slice each in half lengthwise and gently mash the flesh with a fork to create space for the filling.

5. Assemble
Spoon the seasoned bison over the sweet potatoes. Top with a generous dollop of cottage cheese and a sprinkle of chopped cowboy candy for sweet heat.




6. Serve
Enjoy immediately while hot. Great as a hearty lunch or post-workout meal.
