The teres major is its real, anatomical name in the beef world. “Petit tender” is more of a nickname, meant to hint at its similarity in shape and tenderness to the filet mignon. No matter what you call it, it’s one of the most tender cuts you can get from the shoulder — small, lean, and packed with flavor.

We decided to start calling it by its true name because it feels right to give this cut the recognition it deserves. So if you see teres major in the case, know it’s the same delicious little steak you’ve always loved — just wearing its proper nametag.
