I know this meal is more wintery and hearty but with the tender carrots, tomatoes and abundance of herbs available at the farmers market I couldn’t resist making this dish.
Ingredients
- Whole beef shank
- 2 carrots diced
- 1 onion diced
- 2 cloves of garlic chopped
- 1 tablespoon dried Thyme or 3 sprigs fresh thyme.
- 2 bay leaves
- 1 tablespoon tomato paste
- 1 large can of crushed tomatoes or 3-4 fresh tomatoes diced.
- 2 cups red wine
- 2 cups beef broth
- Salt and pepper
Directions
Generously salt and pepper the shank and brown on all sides in a pan with a little oil of choice.
Chop the Carrots and Onions into a Small Dice.
Take out the beef and place in a slow cooker. Add the carrots, onion and garlic to the same pan and let cook for a couple of minutes.
Add the tomato paste and then the wine to deglaze the pan of all the yummy bits from the beef.
Add the veggie mixture to the slow cooker and add the stock and can of crushed tomatoes.
Put on the lid and set the slow cooker to 8 hours.
Go about your day while your house smells amazing!!
When the meat is fall apart tender, take it out of the slow cooker along with the bone.
Tip: I thickened my sauce with a flour and water slurry.
Make sure to take the marrow out of the bone as it is so delicious and serve a little on top of the Osso Bucco. YUM
This meal screams serve me with mashed potatoes!!
