Ingredients

• 1 lb stew beef, cut into small cubes(ribs already down for you at Whitt’s Place!)

• 1 lb ground beef

• 1 large onion, diced

• 3–4 carrots, diced

• 2–3 celery stalks, diced

• 2–3 tablespoons fresh thyme (generous handful)

• 6–8 cups beef broth

• 1–2 tablespoons tomato paste

• 1–1½ cups frozen cut green beans

• ½–1 cup rice (basmati or long-grain)

• Salt & pepper to taste

• Olive oil or butter for sautéing

Instructions

1. Brown the Stew Beef

Heat a large pot with a splash of oil. Brown the stew meat on all sides until you get some good color. Remove and set aside.

2. Brown the Ground Beef

Add the ground beef to the same pot and cook until fully browned. Return the stew meat to the pot.

3. Add the Vegetables

Stir in the onions, carrots, and celery. Sauté 5–7 minutes until softened. Mix in the fresh thyme.

4. Build the Broth

Add the tomato paste and let it cook for 1 minute. Pour in the beef broth, scraping up the browned bits on the bottom of the pot.

5. Simmer

Bring to a low simmer and cook 45–60 minutes, until the stew beef is tender.

6. Finish with Vegetables + Rice

Add the green beans and rice during the last 15–20 minutes of cooking. Stir occasionally to prevent sticking.

7. Season & Serve

Taste and adjust with salt and pepper. Serve warm with bread or a pat of butter on the side.
