Better than the Deli Roast Beef Sandwich

Want to make your own sandwich meat using local, fresh cuts? It’s easier than you think! With just a few simple ingredients you may already have at home, you can create delicious, homemade deli slices. Give it a try—you won’t be disappointed!

Ingredients

  • 2-3 Pounds Eye Round Roast
  • Course Salt
  • Cracked Pepper
  • Fresh Rosemary
  • Olive Oil
  • Fresh Bread (from Whitt’s Place of course!)

Directions

Preheat the oven to 500.

Add a generous amount (approximately 2 Tablespoons each) of course salt, pepper, and fresh chopped rosemary(use dried if you don’t have it) to a shallow roasting pan.

Pat the Roast dry and then roll the meat around on the pan to let the seasonings stick to the outside. 

Drizzle the meat with a bit of olive oil, as this cut is very lean.

Add the roast to the hot oven and cook for 5 minutes per pound. 

I had an almost 3-pound roast and cooked it for 15 mins. 

TURN THE OVEN OFF AND LEAVE THE DOOR SHUT!  

Set a timer for 1 hour and walk away!

Once the timer goes off, remove the roast and, ideally, let it rest for about 15 minutes. Use a sharp knife or electric knife to slice the meat into thin slices.

You can make sandwiches galore with this meat! It’s so much better for you than the Deli sliced meat, and it requires so little effort.
