• 1 lb ground beef
• 1 large onion, diced
• 3–4 carrots, diced
• 2–3 celery stalks, diced
• 2–3 tablespoons fresh thyme (generous handful)
• 6–8 cups beef broth
• 1–2 tablespoons tomato paste
• 1–1½ cups frozen cut green beans
• ½–1 cup rice (basmati or long-grain)
• Salt & pepper to taste
• Olive oil or butter for sautéing

Instructions
1. Brown the Stew Beef
Heat a large pot with a splash of oil. Brown the stew meat on all sides until you get some good color. Remove and set aside.
2. Brown the Ground Beef
Add the ground beef to the same pot and cook until fully browned. Return the stew meat to the pot.

3. Add the Vegetables
