Fajita Rice Bowls

A fresh spin on ACP using Century Farm Fajita Meat from Whitt’s Place.


Step 1: Cook the Rice

Ingredients:
  • 2 cups white rice
  • 4 cups chicken stock
  • 1 (8 oz) can tomato sauce
  • 1 cup frozen corn
  • 1/4 cup chopped cilantro
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 1 tsp chili powder
Instructions:

Combine all ingredients in a pot. Bring to a boil, then reduce heat and simmer covered until rice is tender and liquid is absorbed (about 15–18 minutes). Fluff and set aside.

Step 2: Sear the Fajita Meat

You’ll need:
  • 2 lbs Century Farm Fajita Beef (available ready-to-cook from Whitt’s Place!)
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 1 packet fajita seasoning
Instructions:

Fire up the Blackstone or your favorite griddle. Sear the fajita meat until browned, then toss in peppers, onions, and seasoning. Cook until veggies are soft and beef is sizzling and caramelized.

Step 3: Make the Guac 🥑

Bonus twist: This guacamole includes cream cheese for added richness!

Mash ripe avocados with a scoop of cream cheese, lime juice, salt, and garlic powder for a tangy, smooth guac that holds up beautifully in the bowl.


Step 4: Assemble Your Bowl

Choose your base:
  • Classic: Tomato cilantro rice
  • Low-carb twist: Air-fried tortilla chips (Chef Ali’s shortcut)
Top with:
  • Fajita beef mix
  • Creamy guacamole
  • Cowboy Candy jalapeños (made in-house by Michael!)
  • Cheese Dip (we like to pickup a quart from Jose’s!), fresh lime, or anything else you love
