Our Flat Iron Steak with Rosemary and Garlic Crust is a simple, show-stopping dinner that lets the quality of the beef shine—especially when it’s Whitt’s Place beef. The crust is savory, herbaceous, and packed with flavor, while the steak stays juicy and tender. Add some roasted veggies or a crisp salad and you’ve got yourself a restaurant-quality meal without the reservations.
Ingredients:
- 1 Flat Iron Steak (about 1.5 lbs), from Whitt’s Place
- 2 tablespoons olive oil
- 4 garlic cloves, finely minced
- 1 tablespoon fresh rosemary, finely chopped (or 1 tsp dried)
- 1 teaspoon kosher salt
- ½ teaspoon freshly cracked black pepper
- Optional: 1 tablespoon butter for finishing

Instructions:
- Bring to Room Temp
Remove your flat iron steak from the fridge about 30 minutes before cooking to let it come to room temperature. This helps it cook more evenly. - Make the Garlic-Rosemary Crust
In a small bowl, mix together olive oil, minced garlic, rosemary, salt, and pepper until it forms a paste. - Season the Steak
Pat the steak dry with a paper towel. Rub the garlic-rosemary paste all over the steak, pressing it in gently with your hands.

- Sear and Sizzle
Heat a cast-iron skillet or grill pan over medium-high heat. Once hot, add the steak and sear for about 4–5 minutes per side for medium-rare, or until your desired doneness. (Use a meat thermometer if you like: 130°F for medium-rare, 140°F for medium.)

- Rest and Finish
Remove the steak from the heat and let it rest for 5–10 minutes under foil. For an extra touch of richness, add a pat of butter on top while it rests. - Slice and Serve
Slice against the grain for maximum tenderness. Serve with your favorite sides—we like roasted potatoes or grilled asparagus.
