Homemade Beef Jerky Recipe

Ingredients:

• 1 lb lean, cheap cut of beef, sliced thinly (1/8-1/4” thick slices)

• 1/2 cup soy sauce

• 1/4 cup Worcestershire sauce

• 1/2 cup brown sugar

• 2 tablespoons smoked paprika

• 2 tablespoons smoked salt

• 2 tablespoons onion powder

• 2 tablespoons garlic powder

• 2 tablespoons chili flakes

• A big squirt of sriracha

• 1/2-1 cup fresh pineapple juice

Instructions

Prepare the Marinade

• In a large bowl, mix together the soy sauce, Worcestershire sauce, brown sugar, smoked paprika, smoked salt, onion powder, garlic powder, chili flakes, sriracha, and fresh pineapple juice.

• Fresh pineapple juice is crucial as it contains bromelain, an enzyme that tenderizes the meat.

Marinate the Beef

• Add the thinly sliced beef to the marinade, ensuring all pieces are well-coated.

• Cover the bowl and refrigerate for 12-24 hours. This allows the flavors to deeply penetrate the meat and ensures maximum tenderness.

Dry the Beef

• Preheat your oven to 175°F (80°C).

• Lay the marinated beef slices on a baking sheet lined with parchment paper, making sure they do not overlap.

• Place the baking sheet in the oven and let it dry for 3-4 hours. The beef should be firm but not overly dry.

• Once the jerky has cooled, store it in a ziplock bag.
