We love a Philly Cheese Steak sandwich, but it’s always a challenge to find the right cut of meat to use. Well, we’ve found just the right cut: Beef Bacon! Beef Bacon, also known as Beef Belly, looks a lot like Pork Bacon, It’s sliced the same way, has some nice fat, and if you didn’t know better you’d think it was Pork! Chef Ali took that Beef Bacon, sliced it into strips (which goes really fast) and it becomes the perfect Ali Cheese Steak meat. A little Salt & Pepper, a quick cook on the griddle, and you’ve got a great sandwich!
🔥 Ingredients:
- 1 lb beef bacon, thinly sliced (or shaved)
- 2 large sweet onions, thinly sliced (use a mandoline for perfect rings)
- 8 slices provolone cheese
- 8 Rolls
- Olive oil or griddle oil
- Salt & black pepper, to taste
🍳 Instructions:
Prep Everything First
- Use a mandoline to get those onions whisper-thin.
- Chop the beef bacon.
- Pre-slice your provolone and open the rolls. Set up a prep station so you can move quickly once cooking starts.



Cook the Beef Bacon Fat
- Fire up your Blackstone griddle (or flat top grill). Oil the surface lightly. Lay the beef bacon slices out and cook until they begin to crisp and render fat. Move to the side of the griddle to keep warm.

Cook the Beef Bacon
- Move the fat to the side. You’ll use it for the onions. Salt & Pepper the beef bacon and cook on the griddle, short order style.

Caramelize the Onions
- Move the bacon to the side. Add sliced onions to the bacon fat renderings. Stir often until golden, soft, and sweet. Salt lightly. Move aside when done.

Bring Everything Inside
- Load up what you’ve cooked and bring it inside to assemble.

Assemble & Serve
- Pile portions of the meat/onion/bacon mix together and top each with provolone slices.
- Scoop cheesy meat mix onto toasted rolls.

Enjoy!
- Serve hot with crispy tater tots, pickles, or a simple cucumber watermelon salad.
