Many of you have probably seen variations on this low-carb meal on the internet, but it is so good if you haven’t tried it and comes together in just a few minutes. It tastes like a yummy burger, and you won’t miss the bun!
- 1-1.5 pounds Ground Beef
- S&P to taste
- 1 Tomato chopped
- 1/2 Sweet Onion chopped
- 1-2 heads of Romaine Lettuce chopped or 1/2 head Iceberg
- 2 ounces grated Cheddar Cheese
- Sesame Seeds for garnish (if desired)
- 1/2 cup favorite mayo (I used Duke’s Low Fat)
- 1 1/2 Tbs ketchup
- 1/4 tsp Paprika
- 1 Tbs Dill Pickle Juice
- 1/4 cup dill pickles chopped small
Brown the ground beef in a skillet adding salt and pepper to taste. Chop up the remaining ingredients, grate the cheese, or use pre-grated to make your life even easier!
Whisk the dressing ingredients together, and then add the chopped pickle.
Have everyone assemble their salad to their taste! Sprinkle your finished salad with some sesame seeds if you like to mimic the top of the missing bun! My husband hates tomato (go figure), so he makes his without and loves it just as much!
