Beef & Broccoli

Beef and Broccoli is a classic stir-fry that combines tender, juicy beef with fresh broccoli and a flavorful, umami-rich sauce. This recipe elevates the dish by tenderizing the meat with baking soda, ensuring it’s soft and flavorful. The sauce, with soy sauce, fish sauce, brown sugar, and ginger, adds a savory-sweet complexity that balances perfectly with the vibrant broccoli and hearty beef. Made on a Blackstone grill or cast iron pan, this dish comes together quickly and is perfect for weeknight dinners. Serve with jasmine rice for a complete, satisfying meal that’s sure to become a family!

Ingredients

  • Approx 2 pounds of Steak (Any cut will do.; I used Sirloin, NY Strip, and Flank)
  • 1 Onion, sliced
  • 4 cups Broccoli Florets
  • 2 tsps Baking Soda 
  • 2 tablespoons Cornstarch
  • 1 cup Soy Sauce
  • 1/2 cup Fish Sauce (or Oyster Sauce)
  • 1/2 cup Water
  • 1/2 cup Brown Sugar 
  • 1/2 cup Cooking Wine (I used Mirin, but any is fine.)
  • 3 cloves Garlic, minced
  • 2 tablespoons Grated Ginger (I used the grocery store squeeze bottle of ginger.)

Directions

Cut any variety of Century Farm Steaks very thin AGAINST THE GRAIN. Put in a bowl with 1 tsp baking soda per pound of beef and enough water to cover; massage in. 

Let it sit for 20 minutes, rinse it until completely clean from baking soda, and dry it as much as possible. 
Toss the beef in corn starch.
Prepare sauce: Add all the liquids, brown sugar, garlic, and ginger to a bowl.

Simultaneously steam broccoli until bright green, dump in ice water, and set aside. (I used the microwave and cooked it in a bowl with a bit of water for 4 minutes)

Heat the blackstone or cast iron pan. 

Add some oil of choice.

Add the beef to one side and the onions to the other.

Cook until browned.

Add the broccoli to the onions and then some sauce to both the veggies and Steak.

Mix it all together, tossing while the sauce thickens, and it will come together in a velvety, delicious stir fry.

Serve with jasmine rice.
