2 pounds Century Farm Meat Ground Beef
1 can of fire roasted tomatoes
3 Tbs tomato Paste
1 Tablespoon Italian Herbs
4 cups mixed frozen veggies
8 cups beef stock
3 large Yukon gold potatoes cut into 1 inch pieces
S&P (1 TSP each)
Brown the ground beef in a pan and add salt, pepper and Italian seasoning. Drain the fat and transfer to a slow cooker. Add the rest of the ingredients . Cook on low for 5 hours until the potatoes are soft and the flavors have all combined.
This is a rich, hearty soup that is perfect for a cold night or a crowd.
Serves 8-10.
